Reporting Line: Reports to the Head Sushi Chef and the Restaurant Head Chef
Restaurant Overview :The restaurant is a contemporary fine-dining concept in Brussels centered around a cocktail-driven dining experience, combining a dedicated sushi corner with an Asian and Mediterranean main kitchen. The cuisine balances precision, product quality, and creativity, operating at high volume while maintaining refined execution. Strong coordination between sushi, kitchen, and service teams ensures consistency, flow, and a high-level guest experience. Position Overview: We are seeking an expert Sushi Chef to work full-time in the sushi corner, as part of a 4-person sushi team. The role requires proven sushi experience, strong technical skills, and the ability to perform at high volume while maintaining fine-dining standards.The Sushi Chef is responsible for consistent execution, quality control, and smooth service within the sushi corner, working in close coordination with the broader kitchen team.
Service & Volume: - Dinner only: 18:00 – 23:00 (planned extension to 24:00)- Sunday–Thursday: 80–140 covers- Friday & Saturday: Two services, 220–230 covers- Positioning: High volume with fine-dining execution Team Structure - Sushi corner: 4 chefs- Main kitchen: 6 chefsPreferred Background
- Experience in high-end Asian or Japanese fusion restaurant concepts
